The Process

Ever wondered how the perfect gin is crafted & created? 

  

First, we select our ingredients, the all-important botanicals that are going to tempt your tastebuds!  

  

Once we have those, the next step is to soak/macerate them for 24 hours in pure alcohol, before turning on for distillation. The run takes about 16 hours to soak up all that goodness, leaving nothing behind. We then leave it to cool for 24/48hrs before the watering down process begins.

   

   

Finally, the mix is left to sit for approximately 5 weeks so it mellows out and all of the oils and water mix properly. And Voila, a masterpiece of Irish Craft Gin is produced. It sounds simple but each step is so important and there is expertise at each step.
